Origin: Burgundian soil of clay-limestone type kimmeridgian.
Grape variety: 100% Chardonnay
Situation: Commune of Courgis, left bank
Vinification
Pneumatic pressing. Enzymatic settling 12 to 24 hours around 15°C then alcoholic fermentation in barrels. Aging on lees. Systematic realization of malolactic fermentation then assembly of the barrels after 8 to 10 months. Bonding, light filtration and bottling.

Colour: Bright yellow colour
Nose: Fresh and mineral, fresh fruit notes
Palate: Fine, fruity and mineral at the same time
Food and wine pairings: As an aperitif or as an accompaniment to charcuterie, seafood, grilled fish and even some goat cheeses.
